In our search for "excellence" we came across the artisan lard of Colonnata from "Al Lardo al Lardo", a small, but renowned local family-run company: tasting their product means being overwhelmed by the pleasure of emotions that involve the sense of smell, taste, sight and mind. A very white lard that melts like butter under the tongue, prepared in the old way, "massaged" by hand with love and care in the marble basins with that craftsmanship that only the custodians of true tradition know. The lard of Colonnata, the most famous in the world, must in fact be white, pure, with light pink veins and a tad thin and prepared exclusively in basins of Carrara marble, to breathe only that particular air; these skilled artisans prepare it with attention and care according to an ancient artisan process whose little secrets (those that make it unique) are handed down from generation to generation. And remember: cooking the lardis a sacrilege, the slices should rather be placed as they are on hot bread and so the flavor and aroma will become one with the slice ... pure poetry for the palate.
