The Bongi Antonio farm is located in the municipality of Fivizzano, between the Apennines and the Apuan Alps. The first historical source of the company dates back to 1774, the year in which Valerio Bongi founded part of the house and the farm. Today the mission of our company focuses on the recovery and conservation of the biodiversity of our territory. Since 2015 we have been a pilot company for the recovery of the Pontremolese cow, an indigenous “relic” breed that has always been used, given the very limited production of milk, as a working animal in the Carrara quarry. The milk of this bovine over the years has been re-evaluated, presenting peculiar organoleptic and nutritional characteristics. To protect these, we have adopted raw processing for our cheeses. Our company also deals with the recovery of Wheat 23, an ancient variety at risk of extinction, recovered at the University of Pisa and, after years of intense collaboration, registered in the National Agrobiodiversity Register.
