Felice Guastalli founded the I Sapori del Borgo company over forty years ago, and it is still managed with passion and competence by his daughters Caterina, Elena and Paola. Delicious tastes, selected raw materials, quality of production, all seasoned with a love of culinary arts, are the ingredients that make I Sapori del Borgo a high quality part of the typical gastronomy of the Lunigiana. Pure water, Italian flour, and iodized salt are the basic ingredients of our products. Still today, respecting the recipes handed down to us by our grandparents, we offer simple and genuine dishes of our traditional cuisine. Our know-how is constantly evolving to improve the manufacturing and conservation processes- the company goal is to reach new markets through the right packaging while fully preserving the high quality and flavor of our products. Among the products of I Sapori del Borgo, testarolo is one of the best known. It is the typical first course of the culinary tradition of the Luingiana and its origin dates back to Roman times. It is so called because it is cooked in the "testi", a characteristic cast iron pan that gives it a unique flavor and a golden color. Its dough is simple and healthy, made from Tuscan soft wheat flours, water and salt. We produce testaroli daily so we can offer it fresh or in whole or pre-cut vacuum- packed variants.
