THE FRANCESCA FERRARI OLIVE FARM

The Francesca Ferrari Olive Farm is a young company founded in 2005 in Pontremoli and led with passion by the owner Francesca and her husband Paolo. Following self- designed quality standards, early harvesting is preferred (i.e. during the period that the stone fruits start to change color, usually first and second ten days of November).
The olive harvest takes place by hand stripping and use of mechanical intervention that minimizes the possibility of damaging branches and fruits. The olives, after being stored in ventilated boxes, are pressed within twenty-four hours through a continuous cycle extraction method.

This high quality is privileged over quantity, and for this reason the company has chosen from the very first year of production to undertake the certification process to obtain the “Toscano IGP” denomination (Protected Geographical Indication) and the sub-denomination “Colline della Lunigiana”.
The company has a processing and packaging laboratory that allows them to shorten the supply chain as much as possible, so as to ensure a greater quality guarantee.
The company currently owns about nine hectares of specialized olive groves equipped with a drip irrigation system that allows them to minimize the alternation of productivity between one field and another.
